Last night we made a trip to Safeway and bought Maria’s (Peruvian) artichoke hearts and tonight we diced them with olives into the pino filling. Usually you put in a whole olive and call it a day but we decided to really try something new dice up the olives (Lindsay’s) and the taste was amazing! While listening to music we mixed up some SmartBalance with whole wheat flour (O organics) and eggs from the Humboldt Park Homestead urban farm. The dough was a bit more moist than usual but we were happy with the results because 35 minutes later we had empanaditas galore. Bon appétite we say!
